Spicy Indian Chickpeas

This just so happen to taste EXACTLY like skyline
Ingredients
- 1 medium onion chopped finely
- 2 TBSP of garlic minced
- 3 TBSP of fresh ginger minced
- 1.5 TSP ground cinnamon
- 1.5 TSP garam masala
- 2 TSP ground cumin
- 1 TSP ground coriander
- 0.5 TSP ground cloves
- 0.25 TSP cayenne pepper
- 2.5 TSP coarse salt
- 2 TBSP tomato paste
- 3-15oz cans chickpeas, drained (1 c. liquid reserved)
Directions
- Sauté onion garlic and ginger in a few TBSP oil until lightly golden. Combine the spices in a bowl and mix together. Add to the sauté mix and cook to lightly toast the spices, 1-2 minutes. Add the tomato paste and cook for a few minutes until the mixture turns a dark red. Add the chickpeas and reserved liquid, cover and cook on medium for 10 minutes, removing the lid the last few minutes. Let the chickpeas sit for another few minutes after cooking to soak up some of the flavors. We eat this with some sliced tomato, onion, green chilies and long grain rice.
Notes
- The chickpeas are good hot, cold, or at room temp; great for a potluck and very kid friendly if you halve the cayenne.
