White Bean and Spinach Stew

A delicious Italian white bean and spinach stew- very hearty and incredibly quick to prepare.
Ingredients
- 1 clove garlic, minced
- 1 shallot, diced
- 3-4 cups chicken or vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) white beans
- 1/2 cup pasta
- 1 tsp dried rosemary
- 3 cups fresh spinach
- 1/8 tsp black pepper
- crushed red pepper flakes
Directions
- saute shallots and garlic in olive oil over medium heat, add broth, tomatoes, beans and spices, bring to a boil. Add pasta, cook for 12-15 minutes, until pasta reaches desired tenderness. Add spinach, cook until wilted.
Notes
- Serve with a loaf of crusty bread
- Is vegetarian if you use vegetable broth
