Spinach Souffle

What better way to get your spinach than in a souffle
Ingredients
- 2 packages frozen chopped spinach
- 3 eggs
- 1 pound ricotta cheese
- 1/2 stick melted butter
- 2 cups shredded cheddar cheese
- 2 tablespoon flour
- light salt and pepper
Directions
- Thaw spinach and drain. Beat eggs in souffle. Beat in ricotta cheese, butter, flour, salt and pepper. Add spinach and mix throughly. Bake for 1 hour in a round souffle dish.
