Orzo Salad with Feta & Sun-Dried Tomatoes

This is another get together salad.  This will easily serve 12-14 people


  • 1 lb. orzo
  • 1/3 C. balsamic vinegar
  • 6 oz. feta cheese, coarsely crumbled
  • 3/4 C. chopped basil leaves
  • 3/4 C. re-hydrated sun-dried tomatoes, sliced
  • 1 C. tightly packed fresh spinach leaves, cut into strips
  • 1/2 red onion, chopped
  • 1 small red bell pepper, chopped
  • 1 tsp. salt
  • 1 tsp. ground seasoned pepper, or rainbow pepper
  • 1/3 C. olive oil
  • 1/4 C. pine nuts, toasted in a 350 degree oven for 10 min or until golden (watch carefully as they will burn quickly!)


  • Cook the orzo according to the package directions.  Drain well and place in a large bowl.  Add the balsamic vinegar and stir well.  Add the feta, basil, tomatoes, spinach, onion, red bell pepper and oil.  Toss well.  Just before serving, stir in the pine nuts.


  • Salad may be made 1 day ahead
  • Serves 12-14
