Cherry-Pomegranate Jell-O

Cinnamon and cloves add an unexpected twist to this somewhat tradition Jell-O dish.
Ingredients
- 2 cups boiling water
- 1 package (8-serving size) Jell-O Brand Cherry Flavor Gelatin
- 1 cup cold water
- 1/2 cup pomegranate juice
- 1 can (15 ounce) mandarin orange segments, drained, divided
- 2 cups thawed whipped topping
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
Directions
- Stir boiling water into dry gelatin mix in a 2-quart serving bowl at least 2 minutes until completely dissolved. Stir in cold water and juice. Refrigerate 1 to 1-1/4 hours or until thickened (spoon drawn through leaves a definite impression).
- Remove 1/4 cup of the oranges; set aside for later use. Add remaining oranges to gelatin; stir gently. Refrigerate 30 minutes or until gelatin is set but not firm (gelatin should stick to finger when touched and should mound). Combine whipped topping and spice; spoon over gelatin.
- Refrigerate 4 hours or until firm. Top with reserved oranges just before serving. Garnish with mint leaves, if desired. Store any leftovers in refrigerator.
