Shrimp Greek Style

Good seafood recipe. It’s even better heated over the next day.

Ingredients

  • 5 tablespoons olive oil
  • 1 teaspoon chopped garlic
  • 2 cups cubed tomatoes
  • 1/2 cup dry white wine
  • 1/4 teaspoon fresh basil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 1/2 pounds raw shrimp
  • 1/8 teaspoon hot red pepper flakes
  • 1/3 pound rigatoni
  • 1/2 pound Feta cheese

Directions

  • Heat 2 Tablespoon of oil and garlic. Cook briefly, stirring, and add tomatoes. Cook about 1 minute and add wine, salt and pepper. Add basil and oregano.  Cook over moderate heat about 10 minutes.
    Meanwhile, peel shrimp. Sprinkle with salt and pepper. Heat remaining oil and add shrimp. Cook quickly about 1 minute, stirring. Sprinkle with red pepper flakes.  Preheat oven to 400. Spoon shrimp and any pan juices into small baking dish. Sprinkle shrimp with crumbled Feta and spoon tomato sauce over. Bake for 10 minutes. Meanwhile, cook rigatoni. Serve hot pasta with shrimp mixture spooned over.
    Makes 4 servings.

Notes

  • You can delete salt. Any pasta will do. You may wish to add green peppers, mushrooms, etc.
