Spinach Souffle

What better way to get your spinach than in a souffle


  • 2 packages frozen chopped spinach
  • 3 eggs
  • 1 pound ricotta cheese
  • 1/2 stick melted butter
  • 2 cups shredded cheddar cheese
  • 2 tablespoon flour
  • light salt and pepper


  • Thaw spinach and drain. Beat eggs in souffle. Beat in ricotta cheese, butter, flour, salt and pepper. Add spinach and mix throughly. Bake for 1 hour in a round souffle dish.


  • Serve Hot
