Jazz-Ma-Tazz Stuffed Spuds

For potato lovers, it does not get much better than this.  Potatoes stuffed with all sorts of goodies.  Twice baked potatoes stuffed back into themselves, yummy.


  • 1 tablespoon Olive oil
  • ½ cup Green pepper, finely chopped
  • ½ cup Onion, finely chopped
  • ½ cup Celery, finely chopped
  • 1-2 tablespoons Cajun seasoning
  • ½ cup Shrimp, cooked and chopped
  • 1/3 cup Chicken, cooked and chopped
  • 1/3 cup Sausage, cooked and chopped
  • 4 large Potatoes, baked, hallowed and reserved
  • 2 cups Shredded cheddar cheese
  • 2 cups Shredded mozzarella cheese


    • Preheat oven to 350.  Heat oil in skillet over medium heat.  Cook green pepper, onion and celery for 5 minutes. Add seasoning, meats and potatoes.  Remove from heat.  Stir in 1 cup each of the cheeses.  Mound mixture into potato shells.  Bake 25 minutes.  Top with extra cheese.
