Cream of Broccoli Soup

This recipe for cream of broccoli soup is better than any can you can find in the grocery store.

Ingredients

  • 1 large Onion, coarsely chopped
  • 1 medium Carrot, sliced
  • 2 small stalks Celery, with leaves, sliced
  • 1 clove Garlic, finely chopped
  • 3 cups Chicken stock
  • 1 cup Uncooked chopped broccoli
  • 2 cups Low fat milk
  • 1 teaspoon Salt
  • Pinch Cayenne pepper

Directions

  • In a large saucepan, combine onion, carrot, celery, garlic and chicken stock; bring to a boil.  Add broccoli; cover and simmer until broccoli is tender, about 5 minutes.  Transfer to a blender or food processor and puree (may be done in batches.)  Return to saucepan; add milk, salt, and cayenne pepper.

    Notes

    • Serve hot, or let cool, cover and refrigerate until serving time.  Serves 8.
