oatmeal cookies for little hands

Ingredients

  • 1/2 cup unsalted butter
  • 3/4 cup packed light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1 cup old fashioned rolled oats
  • 1 cup dried fruit

    Directions

    • Preheat oven to 350 F. Cream butter and sugar, add egg and vanilla, mix
      well. Sift dry ingredients together, add slowly to wet ingredients.
      Stir in oats and fruit.
    • Drop cookies by the tablespoon on parchment lined baking sheet. Bake 10-12 minutes. Makes ~30 cookies.

    Notes

    • not exactly a health food, but you could do worse with a cookie! I make
      these often for Claire (and mommy and daddy too). I switch up the fruit
      between raisins, cherries, cranberries, blueberries,etc.
