Brushetta Chicken Bake

We found this is a Food and Family Magazine and it quickly became a family favorite.

Ingredients

  • 1 can diced tomatoes
  • 1 package (6 ounces) Stove Top Stuffing Mix for Chicken
  • 1/2 cup water
  • 2 cloves garlic, minced
  • 1 1/2 pound boneless skinless chicken breasts, cut into bite size pieces
  • 1 teaspoon dried basil leaves
  • 1 cup 2% milk shredded reduced fat mozzarella cheese

Directions

  • Heat oven to 400*.  Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened. Layer chicken, basil, cheese and stuffing in a 13×9 inch or 3 quart baking dish.  Bake 30 minutes or until the chicken is cooked through.  Enjoy now or cover and refrigerate.  To reheat, microwave each serving on high 2-3 minutes.

Notes

  • Serves 6, makes a 1 cup serving.
