White Bean and Spinach Stew

A delicious Italian white bean and spinach stew- very hearty and incredibly quick to prepare.


  • 1 clove garlic, minced
  • 1 shallot, diced
  • 3-4 cups chicken or vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) white beans
  • 1/2 cup pasta
  • 1 tsp dried rosemary
  • 3 cups fresh spinach
  • 1/8 tsp black pepper
  • crushed red pepper flakes


    • saute shallots and garlic in olive oil over medium heat, add broth, tomatoes, beans and spices, bring to a boil. Add pasta, cook for 12-15 minutes, until pasta reaches desired tenderness. Add spinach, cook until wilted.


    • Serve with a loaf of crusty bread
    • Is vegetarian if you use vegetable broth
