No Fat Fried Chicken

This great alternative to high fat fried chicken was submitted by Dru Wieloonski in honor of Carrye and Danny’s wedding.


  • 3 Tablespoons grated Parmesan cheese
  • 1/2 cup dry bread crumbs
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 4 chicken breasts, skinned, seasoned and patted dry
  • 3/4 cups buttermilk


  • Preheat oven to 400 degrees.  Cover a baking sheet with foil and spray with non-stick spray.  Combine all ingredients except chicken and buttermilk.  Pour buttermilk into a shallow dish, dip chicken in buttermilk and then in the dry ingredients and put on baking sheet.  Bake for 35-40 minutes.
