Pumpkin and spices remind me of fall, and they get me ready to hunker down for the winter. Here is a great warming bread that will fill your house with those smells. This is a recipe from Jeana Williams, cousin of Sarah Wissman.
Ingredients
- 2 cups sugar
- 1 cup oil
- 4 eggs
- 1-1 pound can pumpkin
- 3 1/2 cups flour (I use bread flour)
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- 2/3 cups water
Directions
- Preheat oven to 350. Combine sugar, oil and eggs. Add pumpkin and mix well. Sift together dry ingredients, add to pumpkin mixture, and then add water. Thoroughly beat and then pour into 3 greased loaf pans. Bake for 15 minutes at 350. Turn oven down to 300 and bake for 30-40 minutes more. Bake just until an inserted knife comes out clean. Remove bread from pans and cool on a wire rack.
Notes
- Optional orange glaze: Mix up a little powdered sugar with orange juice and brush over the top of the cooled bread.
