Breakfast Casserole

This tater tot based recipe is courtesy of Marlene Scott, friend of Sarah Wissman. What beats tater tots for breakfast? Make this the night before, get up early, stick it in the oven, and the family will awaken to tater-tot goodness.
Ingredients
- 2 pounds Tater tots
- 1 pound Sausage, cooked and drained
- 2 cups Grated cheese
- 2 ½ cups Milk
- 4 Eggs
- ¾ teaspoon Dry mustard
- 1 can Cream of mushroom soup
- ½ cup milk
Directions
- Lightly grease a 9×13 inch pan. Layer ingredients beginning with tater tots, sausage and then cheese. Beat milk, eggs and mustard together and pour over layered ingredients. Refrigerate overnight. In the morning, add ½ cup milk to soup and pour over the top. Bake at 350 for 1 ½ hours.
Notes
- Wake up early to stick it in the oven so it is ready, when the family is ready.

Whoops-thought this was Jenny’s recipe, but it’s Sarah’s!! Yum is all I have to say and very easy. We are actually eating this for lunch this afternoon (Aub is still finishing up hers!). The kids love it-I would add salt-I did add a little, but I’d go back and add some more salt and some pepper-you could even sneak some spinach in this too! Thanks Sarah!
