Hot Wild Rice Chicken Salad

This recipe is otherwise known as “The Shower Special”  It has been made at a number of baby and bridal showers. 

Ingredients

  • 3 cupes diced cooked chicken breast
  • 1 1/2 cups chopped celery
  • 1 cup cooked wild rice
  • 3/4 cup mayonnaise
  • 1/3 cup chopped onion
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 ounce can of mushroom pieces and stems, drained
  • 10 3/4 ounce can cream of mushroom soup
  • 1/4 cup margarin, melted
  • 1 cup crushed corn flakes
  • 1/2 cup slivered almonds, chopped a littl

    Directions

    • Heat oven to 350*.  In a large bowl, combine all salad ingredients.  Spoon into a greased 9×13x2 inch baking dish.  In a small bowl, combine topping ingredients; sprinkle over mixture in casserole.  Bake about 35 minutes or until top is brown an salad is thoroughly heated.

      Notes

      • It is easy to prepare all the parts separately and put together and heat on the day of the shower. The recipe is easily doubled, tripled or even quadrupled and is great as a leftover.
