Zucchini and Walnuts

Quick and easy vegetable side dish that appears more difficult than it actually is. Just be careful not to burn the walnuts, because burnt walnuts smell bad, and taste even worse.
Ingredients
- 1/3 cup English walnut pieces
- ¼ cup Butter
- 2 small Zucchini, coarsely shredded
- Lemon juice
- Salt and pepper to taste
Directions
- Sauté walnuts in butter until lightly browned (be careful not to burn.) Remove nuts. Sauté zucchini in same pan briefly (about 1 minute.) Sprinkle with a few drops of lemon juice; season with salt and pepper. Add walnuts. Toss and serve. Makes 4 servings.
Notes
- Good with beef tenderloin.
