Ritz Chicken

This chicken recipe cannot be easier and more tasty. For awhile, this and chicken nuggets were the only thing my daughter would eat.
Ingredients
- 4 skinless boneless chicken breast halves
- 1 tube Ritz crackers
- 1/4-1/2 stick butter
- 2 eggs
- salt and pepper to taste
Directions
- Beat eggs in a dish. Crush tube of Ritz crackers to coat the chicken, place in a second dish. Season crackers with salt and pepper to taste. Dredge chicken in egg, then in crackers. Place in a 9×13 inch pan. Dot top of chicken with butter. Bake at 350* for 30-45 minutes.
Notes
- Get the kids involved and let them crush up the crackers. You can use chicken tenderloins and add other seasoning to the crackers like Italian seasoning or Parmesan cheese.

My children love this. We call it “cracker chicken” I use the tenderloins so that it cooks quicker and bake on a cooling rack placed in a jelly roll pan so that it crisps up nicely.
