Ritz Chicken

This chicken recipe cannot be easier and more tasty.  For awhile, this and chicken nuggets were the only thing my daughter would eat.

Ingredients

  • 4 skinless boneless chicken breast halves
  • 1 tube Ritz crackers
  • 1/4-1/2 stick butter
  • 2 eggs
  • salt and pepper to taste

Directions

  • Beat eggs in a dish.  Crush tube of Ritz crackers to coat the chicken, place in a second dish.  Season crackers with salt and pepper to taste.  Dredge chicken in egg, then in crackers.  Place in a 9×13 inch pan.  Dot top of chicken with butter.  Bake at 350* for 30-45 minutes.

    My children love this. We call it “cracker chicken” I use the tenderloins so that it cooks quicker and bake on a cooling rack placed in a jelly roll pan so that it crisps up nicely.
