great recipe for pulled pork or chicken
Ingredients
- 1 cup chicken broth
- 2 TBSP balsalmic vinegar
- 2 TBSP light brown sugar
- 1 TBSP chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- *Leftover chicken/pork, shredded
Directions
- Shred leftover chicken/pork. Mix all ingredients, add to shredded meat. Best if made the night before.
Notes
- I only do this with leftovers from a roast chicken or pork tenderloin. Perfect for those who plan their meals for the week ahead of time, I always pre-make the sauce and keep it in a tupperware on the weekend, then when I make the roast during the week, I can shred the leftovers while I’m cleaning up dinner and just add them directly to the tupperware– Presto, dinner for tomorrow!
