Lasagna

For those nights when you feel Italian! Open up the red wine and enjoy!
Ingredients
- 1 pound ground beef
- 3 cups spaghetti sauce (one 28 ounce jar will do)
- 1 box lasagna noodles
- 4 eggs
- 4 cups ricotta cheese
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Preheat oven to 350*. Brown ground beef and drain fat. Add sauce to the beef. Cook lasagna noodles al dente according to package directions. Combine cheeses, eggs, parsley, salt and pepper in a large bowl. Using a 9×13 inch pan spread a thin layer of sauce in the bottom of the pan to prevent the first layer of noodles from sticking. Arrange noodles lengthwise in pan. Spread 1/3 cup of the cheese filling over the noodles, followed by approximately 1 cup of the meat sauce. Repeat layers of noodles, cheese and meat two more times. Top with final layer of noodles and remaining sauce. Sprinkle top with a light layer of additional Parmesan and Mozzarella cheese. Bake 30 minutes covered. Uncover and bake an additional 20-30 minutes.
Notes
After cooking and draining the noodles lay them on wax paper to keep them from sticking together while they are cooling
