Jazz-Ma-Tazz Stuffed Spuds

For potato lovers, it does not get much better than this. Potatoes stuffed with all sorts of goodies. Twice baked potatoes stuffed back into themselves, yummy.
Ingredients
- 1 tablespoon Olive oil
- ½ cup Green pepper, finely chopped
- ½ cup Onion, finely chopped
- ½ cup Celery, finely chopped
- 1-2 tablespoons Cajun seasoning
- ½ cup Shrimp, cooked and chopped
- 1/3 cup Chicken, cooked and chopped
- 1/3 cup Sausage, cooked and chopped
- 4 large Potatoes, baked, hallowed and reserved
- 2 cups Shredded cheddar cheese
- 2 cups Shredded mozzarella cheese
Directions
- Preheat oven to 350. Heat oil in skillet over medium heat. Cook green pepper, onion and celery for 5 minutes. Add seasoning, meats and potatoes. Remove from heat. Stir in 1 cup each of the cheeses. Mound mixture into potato shells. Bake 25 minutes. Top with extra cheese.
