Cream of Broccoli Soup

This recipe for cream of broccoli soup is better than any can you can find in the grocery store.
Ingredients
- 1 large Onion, coarsely chopped
- 1 medium Carrot, sliced
- 2 small stalks Celery, with leaves, sliced
- 1 clove Garlic, finely chopped
- 3 cups Chicken stock
- 1 cup Uncooked chopped broccoli
- 2 cups Low fat milk
- 1 teaspoon Salt
- Pinch Cayenne pepper
Directions
- In a large saucepan, combine onion, carrot, celery, garlic and chicken stock; bring to a boil. Add broccoli; cover and simmer until broccoli is tender, about 5 minutes. Transfer to a blender or food processor and puree (may be done in batches.) Return to saucepan; add milk, salt, and cayenne pepper.
Notes
- Serve hot, or let cool, cover and refrigerate until serving time. Serves 8.
