I was going to add Spinach and/or shredded carrots to the meat mixture, but didn't have any on hand. I think it would be a great way to get some vegies into the meal.

Tommy, I'm so happy to finally know how to cook hard boiled eggs. For years, my eggs are either mushy in the inside, or when peeled, the whites are ripped off with the shell, or I have the green ring on the yolk. Several times, I have to call GiGi to ask how to boil eggs. I will now be serving hard boiled eggs at evey family function....maybe even the Easter Bunny will stop by and have an egg with me!
P.S. How do you color the eggs???

I made these to go with the Baby Blue Salad I served for a dinner party but I made lots extra because I had bought a big bag of pecans on our way home from Florida in the spring of 2009 at the Magnolia Plantation. They are great as a snack!

I love this recipe and make it all the time, but I realized the last time I made it, not all green hot pepper sauce is the same. This time the soup was much spicier than normal (since I ran out of my old bottle of green hot pepper sauce). It was still good, but definitely had a kick at the end. I will probably go back to the old green pepper sauce, though.

Bill actually made this for a get together (meaning it was easy enough for him to follow). Got rave reviews from everybody there! How can you not like something with cheese, potatoes and potato chips in it?
