Chocolate Mint Cookies

When you are craving those Thin Mint from the Girl Scouts, these will hit the spot.
Ingredients
Directions
- Melt chocolate in microwave on high for about 2 ½ minutes. Stir, and heat 1 more minute on high. Add peppermint oil, stir well. Dip crackers in chocolate mixture. Let cool on wax paper.

i make these but use the ‘dark mint’ melting chips meant for candy making. you can melt them in the microwave, very easy! yummy cookie, great for holiday baking!
