Cathy’s Potatoe Chip Cookies

I’m posting this recipe in honor of Cathy Rumpke who made these cookies that were delicious! It was the first time I ever heard of or tasted a “Potatoe Chip” cookies.
Ingredients
- 2 cups butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 4 cups flour
- 1 cup Pringles
- 1 cup pecans
- 2 tsp. vanilla
Directions
- Cream vanilla, butter and sugars together. Add flour and blend well. Add chips & nuts. Roll into 1 inch balls and then roll it in sugar. Press down with drinking glass bottom to flatten. Bake 350 for 16 – 18 minutes.
